The ring sausage is the must-order, a coarse-ground, peppery link that snaps against the natural casing from a recipe that predates the second World War. Brisket comes with a hard, dark bark and a rendered fat line, and the beef ribs are the kind of primal, bone-in cut that Lockhart made famous. History and consistency define the place; the Austin location captures the recipes, but it can't quite replicate the ground this one stands on.
