Snow's BBQ
$Saturday mornings only. Tootsie's legend lives here.
“The James Beard-honored pit that put 'Lexington-style' on the map.”
Order the chopped or coarse-chopped pork shoulder tray with red slaw, hush puppies and sweet tea, and try the smoky 'brown' outside-meat if you like bark. Open Monday through Saturday and closed Sunday.
Founded in 1962 by Wayne 'the Honey Monk' Monk, who trained under Warner Stamey, it earned a James Beard Foundation 'America's Classics' award in 2003 and remains the definitive Lexington-style pit. Monk famously cooked his barbecue for world leaders at the 1983 Summit of Industrialized Nations in Williamsburg.
Regulars point to Chopped Pork Shoulder Tray, Coarse-Chopped 'Brown' Outside Meat, Red Slaw, and Hush Puppies.
Lexington Barbecue is mid-range ($$).
Lexington Barbecue serves Lexington-Style barbecue — Lexington (or 'Piedmont') barbecue is built on pork shoulder rather than whole hog, cooked low and slow over hardwood coals until it can be chopped or sliced. It is dressed with a thin, tangy tomato-and-vinegar sauce known locally as 'dip,' and the same dip flavors the region's signature 'red slaw' (also called barbecue slaw), which uses no mayonnaise. The style traces to tent cooks like Sid Weaver and Jess Swicegood on the Lexington courthouse square in the early 1900s and was codified by pitmaster Warner Stamey. Davidson County calls itself the 'Barbecue Capital of the World.'
