Out on the US-290 east side, this Bill Miller keeps the east-of-town crowd fed on a schedule most craft trailers would never attempt: doors open at 5:30 a.m., pit running until dinner. It is the workhorse end of a Texas family chain that has been part of the state's routine since 1950, and this store wears that role plainly. The order writes itself. Hickory-smoked brisket sliced fast, house sausage, and the breakfast tacos that made the chain a morning habit come out inexpensive and without ceremony, backed by a chicken-fried steak and a sweet tea. Nothing here reaches for a Top 50 list, and it doesn't try to — the point is a full plate for a few dollars, served the same way today as it was decades ago, in a part of town that runs on exactly that.
