Run by pitmaster Holden Fulco — a Franklin and Interstellar alum — Parish Barbecue cooks from a trailer behind Batch Craft Beer & Kolaches on Manor Road and earned a Michelin Bib Gourmand in its very first year. Fulco threads Louisiana heritage through Central Texas technique, giving a young operation an identity that reaches past the standard three-meat board. The brisket shows the pedigree, oak-smoked with a firm bark and clean fat, but the Cajun accents are what set Parish apart. Snappy boudin, house ham, a rare smoked pulled duck available only on weekends, and crawfish cornbread dressing pull the menu toward the bayou without loosening the Texas grip on the smoke. It is a debut-strong pit whose Louisiana roots turn a familiar format into something distinctly its own, plate after plate.
